They finally start to eat healthy!

Have you ever slaved over a hot stove all afternoon just to scrape the dish you have lovingly created off plates and straight into the bin?  I have, on numerous occasions.  It seems that the more time I spend cooking, the less they eat!  

Since having the children I have become somewhat obsessed with nutrition, partly due to my sons bowel issue that he as suffered from since birth and partly because I have witnessed a friend with a long term illness eat her way to the most astonishing health.  This poses a problem with picky eaters who may not relish the idea of sitting down to a bowl of quinoa after a long day at school.  It is also time consuming and there have been times that I wonder if I have merely made a rod for my own back.

So, when I stumble across something nutritious that we all like I’m elated.  When it’s easy to make and I can even freeze some batches for another day then even better!

I’ve often been a little jealous of people who can toast a piece of bread and heat up a tin of beans for their children.  This has never been an option for me as baked beans have never been popular with the kids and let’s face it, they are usually full of salt and sugar and not the most nutritious thing we could be serving our families.  So I decided to make a homemade version.  Father Christmas gave me a copy of Amelia Freer, Cook. Nourish. Glow this year and she has a recipe for Baked Beans in there that is full of veg and packs a nutritional punch.

I adapted the recipe slightly by adding a swig of maple syrup for sweetness and lashings of Grass Fed Butter (don’t get me started on the whole Grass Fed thing!) and the kids lapped them up, even asking for more.  Then in the evening i added a generous spoonful of chipotle paste to spice it up a bit for the adults and give it some smokiness and they went down a treat.  So, if you, like me, are always on the lookout for meals that the whole family can enjoy and benefit from then I can heartily recommend the book.  I would just like to say that I do not profit in anyway from the sale of any of her books or products but a quick look at her website and the long list of letters after her name will no doubt convince you that this is a sound investment for the future health of your family.
